Our range runs from whole swimming crab and giant tiger prawns to mackerel fillets, yellowfin sea bream, baby cuttlefish and Babylon snails. Cold coastal water does most of the work; the rest is timing.
Every line is graded by hand, then frozen hard so the texture and sweetness of the landing day survive the trip to your kitchen.

THE COLD JOURNEY
Every carton is opened, inspected and its seal checked before it enters the cold store. Anything that does not meet the grade does not travel.
Seafood that travels refrigerated is held at 5°C or below for the whole journey, with as little time outside temperature control as the route allows.
Frozen seafood stays frozen from our store to your door. Move it straight into the freezer on arrival, where -18°C or colder holds it at its best.
The liner and cold packs are chosen around the product, the season and the distance. Sealed packs travel clear of loose meltwater.
Exact limits and shelf life depend on the species and the pack, so the label always takes priority. If a pack arrives damaged or unexpectedly warm, assess it before use.
SERVE IT SIMPLY
Heat for mackerel, bright citrus for prawns, and almost nothing at all for marinated snails. Three ways in, none of them complicated.

Dry the fillets well, season lightly and lay them skin-side down in a hot pan. Let the skin crisp before a short finish on the other side.

Warm the prawns through in butter with garlic and a squeeze of lemon, and stop while they are still firm. Serve them with the pan juices.

Spoon the snails and their marinade into a small bowl and serve with rice or bread. Add nothing that would talk over the marinade.
