Overview
Sourced from clean coastal grounds and put into the freezer soon after harvest, these shellfish carry a beautiful brown-and-white spotted shell with plump, springy meat tucked inside. They are a fixture of seaside eating, equally at home on a party platter or in a spicy wok.

Ways to Enjoy
Boil — thaw in the refrigerator, rinse the shells, then cook in boiling water until the meat is done. Serve with a garlic and chilli dip.
Chilli marinade — boil first, then steep for several hours in chilli, garlic, spring onion and vinegar.
Wok stir-fry — cook fast over high heat with ginger, garlic and fresh chilli.
Braised — simmer with aromatic spices; stop as soon as the meat is tender so it does not turn rubbery.
Storage
Keep at -18°C or below. Thaw inside the refrigerator before preparing. Do not refreeze after complete thawing, and keep the pack sealed so the shells do not pick up other freezer odours.
